From Pop-Up to Permanent Home: Inside the Kitchen at Alfie’s, D.C.’s Newest Northern Thai Hotspot

Washington, D.C.’s dining scene has a vibrant new contender, capturing attention with a bold synthesis of traditional northern Thai heat-packed cooking methods and locally sourced ingredients from across the DMV region. Alfie’s, the brainchild of chefs Justin Ahn and Alex McCoy, has officially put down permanent roots in a Georgetown alleyway after years of cultivating a dedicated following through pop-ups and international ventures.

The restaurant’s journey to this moment spans several years and multiple continents. Alfie’s originally launched as a modest pop-up in the Petworth neighborhood back in 2017. Following its initial local success, the culinary concept traveled around the world, serving eager diners in major metropolitan hubs like New York and London. Now, with a permanent address tucked away in Georgetown, Ahn and McCoy have brought their global culinary perspective back to the District, offering a menu that marries uncompromising traditional Thai flavors with contemporary flair and local provisions.

Recently, the co-owners offered an exclusive, behind-the-scenes look into a day in their new kitchen, demonstrating the meticulous preparation that goes into everything from hand-cut green papaya for their vibrant som tam salad to a strictly limited-quantity Thai steak frites accompanied by a massaman curry peppercorn sauce.

In the restaurant’s bustling kitchen, the culinary team begins the intense daily preparation by breaking down rib-eye steaks for their unique take on a classic steak au poivre. This particular dish is an exercise in exclusivity, with the kitchen preparing only five portions each night. Every massive 26-ounce rib-eye steak is carefully seared to order, ensuring an optimal crust and tender interior. The accompanying au poivre massaman curry sauce is finished directly in the pan, incorporating the leftover beef fat to build a rich, complex foundation of flavors. This fusion masterpiece is ultimately served alongside classic bar fries, bridging the gap between traditional steakhouse fare and bold Thai aromatics.

Elsewhere on the kitchen line, another chef is deeply focused on carving green papayas by hand. The irregular slices of papaya are subsequently tossed in a funky, spicy dressing for every individual order. Culinary team members describe this as the most labor-intensive dish on the line, requiring precision and speed. Each order of the som tam salad is carefully mixed with fresh tomatoes, crunchy peanuts, and a dressing heavily reliant on palm syrup and tamarind, achieving a delicate balance of sweet, sour, salty, and fiery notes.

Meanwhile, a rich pork belly curry simmers steadily in the background, filling the kitchen with an enticing aroma. The dish, known traditionally as gaeng hung lay, involves cooking down large, substantial pieces of pork belly until they achieve the ideal tender texture with a distinct, unctuous fatty layer. To prevent the dish from becoming overly heavy, the chefs incorporate pickled garlic and pineapple, which cleverly balance the rich, complex flavors of the curry paste, pungent tamarind, and savory fish sauce.

As the evening service approaches, the pace in the kitchen accelerates. The chefs begin the crucial task of prepping fresh herbs and sticky rice. The rice, which has been soaking overnight to ensure proper hydration, is quickly steamed right before service to achieve that signature malleable, glutinous texture essential for complementing northern Thai dishes.

Reflecting on the grueling yet rewarding nature of their craft, McCoy notes that being a professional chef is far more of a lifestyle than a standard job. However, he emphasizes that there is an immense and unmatched payoff when a chef gets to watch diners genuinely enjoy the fruits of their hard work every single night. Looking forward, McCoy shares his ultimate vision for the establishment, hoping that Alfie’s will become a welcoming sanctuary where patrons can simply forget where they are, have a wonderful time, and completely lose themselves in the immersive experience of the atmosphere and the food.

Food enthusiasts and home cooks interested in witnessing the craftsmanship firsthand can watch the kitchen team at Alfie’s cook classic Thai dishes and innovative fusion plates, such as the signature curry steak frites, in the latest episode of Now Open.
